Not everyone is a morning person, or has time to make a big breakfast before work. So making breakfast the night before is a wonderful and time saving idea. There are many reasons to why these overnight oats are the best thing to start your day:
- It only takes 5 minutes to make a week’s worth
- PEANUT BUTTER
- It is packed with protein (from the oats, chia seeds and Peanut Butter)
- You get a boost of antioxidants from the blueberry’s
- You can eat it hot or cold
- Put it in little jars and eat it on the way to work
- Did I mention PEANUT BUTTER
So how do you make this delicious breakfast? Follow the recipe below and you won’t be disappointed!
Ingredients:
- 2 Cups of Gluten Free Oats
- 4 table spoons of Chia Seeds
- ¼ cup of organic peanut butter
- 2 ¼ cup vanilla almond milk (soy, rice or lactose free milk can be used)
- 1 cup of Frozen blueberries
Method:
- In a mixing bowl, combine oats, chia seeds and almond milk
- Fold in 1 table spoon of organic peanut butter.
- You can fold in the blueberries now if you’d like or you can wait till morning
- Refrigerate overnight
- In the morning, if you like it warm, microwave for 30-60 seconds
