Peanut Butter and Blueberry Overnight Oats

Not everyone is a morning person, or has time to make a big breakfast before work. So making breakfast the night before is a wonderful and time saving idea. There are many reasons to why these overnight oats are the best thing to start your day:

  1. It only takes 5 minutes to make a week’s worth
  2. PEANUT BUTTER
  3. It is packed with protein (from the oats, chia seeds and Peanut Butter)
  4. You get a boost of antioxidants from the blueberry’s
  5. You can eat it hot or cold
  6. Put it in little jars and eat it on the way to work
  7. Did I mention PEANUT BUTTER

So how do you make this delicious breakfast? Follow the recipe below and you won’t be disappointed!

Ingredients:

  • 2 Cups of Gluten Free Oats
  • 4 table spoons of Chia Seeds
  • ¼ cup of organic peanut butter
  • 2 ¼ cup vanilla almond milk (soy, rice or lactose free milk can be used)
  • 1 cup of Frozen blueberries

Method:

  1. In a mixing bowl, combine oats, chia seeds and almond milk
  2. Fold in 1 table spoon of organic peanut butter.
  3. You can fold in the blueberries now if you’d like or you can wait till morning
  4. Refrigerate overnight
  5. In the morning, if you like it warm, microwave for 30-60 seconds
